Tortillas: 1) Mix dry ingredients very well, add oil and egg then mix well 2) Use water to bind the dough, knead well to softer dough 3) Cover for fifteen minutes 4) Make pingpong balls of the dough 5) Roll into thin rotis, and roast on griddle like rotis, should not let brown spots appear 6) Can apply little butter while roasting 7) When all done cover with damp cloth Sauce: 1) Bake tomatoes in oven on 200 C till tomatoes are charred 2) Put all ingredients in blender except herbs and garlic and blend to smooth paste 3) In a pan pour the paste add herbs and garlic, keep on boil till it bubbles 4) Let it cool down Filling: 1) Braise onions in two tablespoon of oil till golden color 2) Add mince meat and the rest and braise till mince is cooked and dried up 3) Remove from flame, let it cool down add chopped parsely How to prepare enchiladas: 1) In a long or square casserole, put three to four tablespoons of sauce 2) On working table keep one tortilla, put two tablespoon of mince mixture keep from one end to the other 3) Put actablesppon of sauce all over it 4) Sprinkle grated cheddar cheese 5) And roll the tortilla like swissroll and keep on the casserole 6) Keep doing for all tortillas the same 7) Pour the extra sauce all over the rolls 8} Sprinkle generously grated cheddar and mozarella cheese 9) Sprinkle chopped parsely and olive rings 10) Bake in oven till cheese melts
